This fascinating group of buildings were originally built as a Capuchin convent on the site of a pre-existing Medieval church. It is believed that the spot, close to abundant springs which inspired its name, has been used as a place of worship for thousands of years, and archaeological findings would confirm the hypothesis that the ancient Etruscans chose the site for this purpose. The property came in to private ownership half way through the last century and initially served as a gentlemen's residence before being transformed in hotel.

In recent years the convent building and its beautiful frescoes have been the subject of an extensive restoration project carried out by expert restorers, in accordance with restoration principles laid down by the central restoration institute of Rome.
